There are veggies šŸ„•šŸ„• hiding in this mac & cheese šŸ‘€, but you’d never even know it! A while back, I posted a recipe for ā€œdairy-free veggie bisque” and this mac & cheese uses that soup instead of milk, cream, butter, and flour as the base. It’s not some uber healthy version of mac & cheese -there’s a nice creamy sauce with plenty of cheese. Instead it’s one of those things where you can enjoy a pretty authentic mac & cheese and feel great after you eat it!

I LOVE blueberry muffins (especially the top), but I had never put enough focus and energy into creating a good muffin. After tons of experimenting, I think I’ve created the perfect blueberry muffin. They’re packed with blueberries and have a light, fluffy, texture. They also have perfectly domed tops and an amazing crumb topping. They’re soooo good I even eat the bottomĀ šŸ™ƒ

Tahini Brown-Sugar Pudding with Chocolate Ganache and Sesame Brittle

Sometimes the creative process is frustrating. For this post, I really wanted to mix things up with a pudding that was NOT chocolate. Four variations later, I was finally happy with my flavor combination which DID have chocolate in it -but there are far worse things in the world to worry aboutĀ šŸ™„. Ā I also made some sesame brittle for a fun and fancy little topperĀ šŸ’ƒšŸæ. It’s also quite tasty, so don’t skip it!

Super Tomato Soup

My Super Tomato soup was born when I had my soup business. I was on a quest to make a tomatoĀ šŸ…Ā soup that did not contain cream or sugar. After many test batches, I finally started giving it to friends to try, and it was an instant hit! I was originally going to call it tomato & rice, but one of my friends insisted that name didn’t do it justice, so I called it ā€œSuper TomatošŸ’ŖšŸ…ā€. It’s a tomato soup but amped up with the addition of Parmesan cheese, rice, lentils, and spinachĀ šŸ˜‹.

Hummus Toast with Roasted Tomatoes

So versatile, healthy, easy-to-make, and delicious, hummus and roasted tomatoes are great things to keep on hand! This happened to have been my lunch today, but it would also make a perfect breakfast, snack, appetizer or fabulous additions to a graze board. The oven roasted tomatoes can be added to everything from salads to pasta as a topping for meats, fish, hummus toast, avocado toast or a cheese toastie! The possibilities are endless!!

This dairy free veggie bisque is comfort food without the creamšŸ˜‹! It’s justĀ 5ļøāƒ£Ā ingredients (carrots, cauliflower, onion, celery, and olive oil), but so flavorful, hearty, and healthy! It’s also gluten and dairy free which made it very popular when I had my soup business. It was originally called ā€œcarrotĀ šŸ„•Ā cauliflowerā€. Until one day the manager of the frozen yogurt stores where people picked up my soups, commented that this soup was so delicious, but she thought it wasn’t doing well because of the name 😳. I changed it to ā€œdairy free veggie bisqueā€ and sales immediately went up…

Beet, Orange, Mint and Feta Salad

What do beets, oranges, and fresh mint have in commonšŸ¤”??? They all came from @boroughmarket and went into this fresh, crunchy, sweet, tangy, flavorful salad I made šŸ˜„ (a bit of a trick question šŸ˜‰). I also added toasted pumpkin seeds, feta cheese, and pomegranate and tossed it all together with a tahini lemon vinaigrette. It was just what I (actually all of us) needed after a lot of hot chocolate tasting and leftover cake eating we did last week šŸ™„!!
