Asian Salad with Peanut Dressing

This versatile salad πŸ₯— can be a meal, a side and pretty much anything in between. The recipe calls for veggies in every color of the 🌈 + peanuts, rice noodles, and fresh herbs, but the great thing about it is that you can really put in whatever you want. If you love broccoli or snow peas, go ahead and add some. Not a fan of peppers, leave β€˜em out. Whatever you do, just be sure to make plenty of the peanut dressing -because even cardboard could taste good with that on it πŸ˜‰.

Pulled pork shoulder with pappardelle

This hearty pulled pork with pappardelle is definitely a meal to cozy up with on a cold winter night πŸ€—. It has a vibe of comfort food but also fresh tang from some green apple 🍏, white wine, and vinegar. Andrew LOVES this dish, but for some reason it fell out of my cooking rotation. When I was #Boroughmarket recently, I saw fresh pappardelle and was reminded of it. I decided it was a great one to share, especially since it’s winter. It’s easy enough to make for a weeknight dinner and special enough for company. It has a fairly long list of ingredients, but don’t be intimidated. The preparation is pretty straightforward and simple.
